Dr. Dharini Krishnan conducted an orientation on the nutritional benefits of Ajinomoto (MSG) and how it is extracted from natural crops like sugarcane and mushrooms.

Atsushi Mishuku, Managing Director, Ajinomoto India said, “Ajinomoto (MSG) is extracted from natural products like sugarcane juice, corn and tapioca. We use the most available source to extract the MSG from where we are presently at. We are also the first company to produce MSG on a commercial scale," he added.
Regarding the misperception that MSG has garnered over the decades, Govinda Biswas said, “Only the imitation products that come from China without regulatory approval are harmful. Ajinomoto adds a delicious taste to the food and is made from the finest quality crops like sugarcane and tapioca through the fermentation process. We have successfully been countering the misconception regarding MSG and are happy to say that due to our concerted efforts, we have seen an increase in sales and consumption.”
Explaining the components of Ajinomoto which are glutamate, sodium and water, dietician Dr. Dharini Krishnan elaborated, “Mono Sodium Glutamate is very safe for human consumption. Glutamic acid is something, which is found in breast milk also and is very safe. It is prepared from natural ingredients.”
She also stressed on the benefits of MSG saying, "If we reduce the salt quantity in our food, the overall delicious taste to the food will decrease. MSG enhances the taste of the dish and at the same time reduces the consumption of sodium by 30 percent.
Rajasekar Panneerselvam, Sr. Executive Chef at Ajinomoto India Pvt. Ltd held a demonstration of how MSG can enhance the taste of the dish and at the same time reduce the consumption of sodium by 30 percent. The soup prepared was complete with the effervescent taste of ‘umami.’ Since MSG adds to the taste of otherwise bland but nutritious food, it can be used to good effect by making food palatable to those who are reluctant to eat.
