Coimbatore : With the glow of Christmas spreading around the world, the sheer joy of gorging on delectable treats is crowned with the aroma of the traditional Christmas plum cake, with its dry fruits and nuts.

Plum cakes are made of either dried fruits like grapes, currants, raisins or prunes or with fresh fruits depending on one's taste and preference along with plums as the primary ingredient. Most people prefer adding rum or brandy infused with dried fruits, while some may prefer to bake their cake without any alcohol.

Preparing the traditional plum cake is definitely not a cakewalk and the team of chefs at The Residency Towers will bear testimony to it. Every year, they labour hard to offer their guests the authentic taste of these traditional plum cakes.

“We started carefully sourcing the fruits in September itself from different places. We have used Afghan grapes and black grapes at 50:50 ratio, and also other dry fruits and nuts,” says Ajeeth Janardhanan, the Executive Chef at The Residency Towers. The hotel had a grand cake-mixing ceremony in October, with the mix taken out only at the beginning of December to prepare the delicious plum cake. “The cakes were slow-cooked in the oven for about two and a half hours and later packed away. We let it mature for 10 to 15 days, with the cakes being prepared in such a way that they will have a shelf life of one year," adds Ajeeth.

Make your Christmas complete by visiting Krave at The Residency Towers, where the much-sought after traditional plum cakes, can be bought off the platter. For once, you can have your cake and eat it too!
